Chocolate Fudge Cake


This cake is very similar to marble cake, however here the entire cake is of chocolate flavor instead of two different flavors blended in... I could have easily instructed you to follow the steps as mentioned in  the earlier post of "Marble Cake" but there are some fine variations which are important to get that magical end result which gives the cake an unique flavor caramelized flavor :)



Ingredients :-
1.Compound chocolate (Dark) - about 125 grams could be reduced slightly as per taste
2.Unsalted butter - 150 grams
3.Three eggs- I used 4 as we like the cake to be slightly fluffy, if 3 eggs are used the cake could turn slightly more like a brownie, that is like a fudge the original recipe meant to be...
4.Caramelized (Demerra) Sugar one measuring cup (about 250 grams)
5.All purpose flour 1 1/4 th measuring cup (about 250 grams)
6.Vanilla essence one tsp.
7.Baking powder 1 tsp
8 Baking Soda a pinch
9 Yogurt (drained) 2/3 measuring cup


Methodology :-

1) Sieve together the all purpose flour (maida)  + baking powder + baking soda and keep it aside

2) Melt chocolate using double boiler system in a pan or more easier way could be melting it in oven for 2 mins. approximately by mixing it with some butter (add some butter with chocolate pieces to be melted in microwave safe bowl and then heat it, make sure you don't overheat the mix, as beyond certain temperature chocolate tends to loose its smooth texture and turns rough, which indeed is useless for us, so keep checking by slightly stirring the mix, the result should be silk smooth paste

3) Soften butter in bowl by continuously stirring it (butter when bought from store or also the stalked refrigerated one should be kept outside at room temperature for sometime, for the task to be easier), the result should be slightly smooth paste

4) Add Caramelized Sugar to softened butter, whisk it well, this should be done very properly, hand whisking is the best, the end result should be creamy and in fact professional chefs have termed it as "Creaming" globally

5) Add Chocolate paste to Sugar + Butter Cream, mix well

6) Beat eggs separately, i suggest you not to use blender but instead whisk it manually, believe me it gives much better result when done properly when compared to the machine, its all from my experience of baking

7) Simultaneously add vanilla essence to the prepared mix, followed by yogurt, mix well

8) Add beaten eggs to the mix, mix it well

9) Finally add sieved flour to it, mix it properly ( take care of not stressing it out too much, such that it losses the aeration necessary for baking) your cake batter is ready, all set to be baked in oven :)

Note: 
1.The average baking time for cake is 18 to 20 mins in any microwave oven, but the particulars stated above are with respect to 1000W oven which we own, so the methodology of baking may differ depending on the wattage

2.The variation in ingredients compared to Marble cake ones are highlighted, make a note of it


For icing :
They are many ways to top up the cake ar per choice, I would specify two of them

Chocolate Icing made simplistic
Melted Chocolate + Butter + Fresh Cream, mix them  and top it on cake

Whipped cream vanilla flavor (I would recommend it, since it balances the taste, compatible with already rich chocolate cake)
Whipped cream + Icing sugar, top it up...also additional grated chocolate flakes over it creates a magic :) YUMMY...Enjoy this Cake for any occasion

Note :
Whipping cream recommended in India is Merry Whip which is a local product from Kolhapur, Maharashtra...if you find something better please do let me know...lot of imported products are available in stores which have premium pricing, and can raise the cake expenses even higher than the cake bought from the store, I do not find a reason to do that :o) ...
It is best recommended to whip the cream when it is chill to get that foamy texture, which is easier to achieve when icing sugar is slightly added to it

For people outside India there are lot many options for pre-whipped cream i guess :)
